Abstract

The author complains about conceptual confusion evident in the use of the term alchemy when referring to culinary skills and goes on to explore whether the texts of some Greek alchemists of late antiquity can provide insights into past cooking techniques.

    Pávlos Erevnídis is based in Athens, he writes about both early cookery and musical theory and is the author of O Pastourmos, and (with Hristos Tsiamulis) of Romii Synthetes tis Polis (Greek-Orthodox Composers in Istanbul).

Sepia toned cover illustration is of the sheep next to an old stone wall/ the photograph by Victoria Skinner. Used by Tom Jaine as a Christmas card in 2006. The sheep are mainly Manx Loghtan.
