  • Katarzyna J Cwiertka, Leiden University

    Katarzyna J. Cwiertka is at Leiden University. Her research focuses on the production and consumption of food in twentieth-century Japan and Korea. She has written about Kaiseki cuisine, as well as editing a book on Asian food for the University of Hawaii Press. She is currently preparing a monograph on the culinary history of modern Japan (Reaktion Books).
