The author, Associate Professor in the Department of History at Michigan State University, introduces us to a little known French author who listed fish and fruits available at Le Havre in the late 18th century and applied to them a system of rating for merit, in several different respects. In her own idiosyncratic way she anticipated the modern procedures of 'taste panels'.
