Abstract

The first part of this article appeared in PPC 7. The author concludes it here, and adds at the end a selection of English recipes for spinach over 600 years. The last of these, dated 1981, is her own and demonstrates in a personal manner that the effects of the Saracen Connection are still to be seen - and tasted- today.
