The authors are writing a series of articles on the history of food plants in France. They comment that the French, like most nations, have had a surprisingly different selection of food plants served at their tables at different periods in their history. The sweet potato, chosen almost at random for this first study, illustrates the point. It does have a history in France, although not nearly as long or varied a one as many more popular plants.
