Abstract

The article is a reworking, by the author, of the first chapter of Slurp! A Social and Culinary History of Ramen – Japan’s Favorite Noodle Soup which was published in 2012 by Brill. It provides a history of traditional ramen as well as its offshoot, instant noodles.

  • Barak Kushner, University of Cambridge

    Barak Kushner teaches modern Japanese history in the Faculty of Asian & Middle Eastern Studies (formerly the Faculty of Oriental Studies) at the University of Cambridge and has a PhD in History from Princeton University. He has written lots on Japanese history and of course, Slurp!, see below.
