Abstract

This article provides a history of waffles and their indispensable appliance, waffle-irons, in America from their introduction by Dutch settlers in New Amsterdam to the present day.

    Jeffrey Rubel is a junior (class of 2017) at Williams College in Williamstown, Massachusetts, where he is majoring in geosciences, taking courses in food studies and art history, and leading education outreach at the local high school.
