A Lost ‘Goujon’ of Delight in England?

While researching a book on freshwater fish I was surprised how often this small cyprinid was lauded as entertaining for anglers and as a delicious dish. The latter was particularly surprising as much of this culinary praise was written at a time when freshwater fishes in general had fallen out of favour on most English tables. This article looks at the changing acceptance of this fish in the culinary and angling history of Britain.
