Abstract

Background about conditions affecting gut integrity and how recent scientific advances in microencapsulation of "resistant starch"  which is proven to assist in preserving gut integrity can be replicated in the domestic kitchen.

    Don Peterson lived in China for eight years, where he wrote for PPC about pasta and seaweed. He now lives in São Paulo where he works at the Instituto de Estudos Avançados.
