Abstract

The article looks at the history of imitation meats in the West from ancient Rome to the present, investigating methods and motivations.

    Melitta Weiss Adamson is Associate Professor of German and Comparative Literature and of the History of Medicine at the University of Western Ontario. Her books include Food in the Middle Ages, Medieval Dietetics, Regional Cuisines of Medieval Europe and the edition of Daz buoch von guoter spise.
