Perhaps one should be apologetic for bringing up the subject of the history of ice-cream again in this publication as the subject dominated the first two issues of PPC and a Supplement to the third. But two fairly recent publications on the origin of artificial freezing and ice-cream by Elizabeth David (1996) and Pim Reinders (1999) prompts me to add a short note on the receipt for iced cream in Anne Fanshawe’s manuscript (Lady Anne Fanshawe, manuscript, 1651–1678, Wellcome Library, Western Manuscripts, MS. 7113, folio158.).
