What follows is a slightly adapted extract from A Taste of Leeds, the book by Peter Brears which is reviewed on page 53. Long ago, in PPC 5, we published a charming article by John F Preston on the collection of old cookery books which he gave to the Brotherton Library of the University of Leeds. The Library already possessed a very important collection donated by Mrs Blanche Leigh. We take this opportunity to celebrate her generosity and the good results which have flowed from it over more than fifty years.
This note concludes with two recipes which Peter Brears has adapted from Mrs Leigh's own recipe collection.
