Abstract

Jeremiah Tower, the San Franciscan chef and restaurateur, recently spent some time in Europe, pursuing gastronomic researches and 
building up his library of cook books. He freely imparts his own recipes to European colleagues. This one, for a highly distinctive soup, is among his favourites.
