Abstract

Caroline Cookson is engaged in writing a history of housework in the British Isles from about 1700 until the middle of this century. The evolution of cooking techniques is, obviously, an important part of the study. This essay, of which the first part only is printed here, 
represents 'work in progress', which will need amplification and correction. Comments from readers will be warmly appreciated, especially if they help to resolve any of the problems listed at the end.
