Rather little attention has been paid in cookery books to the cuisine of the Lowland Scots. Sheila Thompson, whose grandmother lived in Kirkcudbrightshire, thought that she could do something towards filling the gap in the literature by asking her mother to provide a selection of recipes from the old family recipe book. A few of these recipes are printed below, preceded by Sheila's mother's covering letter, which was not intended for publication but which-as readers will surely agree-makes the best possible introduction to them.
