Abstract

Nathan d'Aulnay, the painter, here leaves his studio to claim our attention for the parallel artistry which he exercises in the kitchen. 
Erudite in the classical cuisine of France, passionately interested in the technical and practical details of culinary operations, he communicates his knowledge with panache and precision. There are few dishes which he enjoys making more than a gratin such as the one which he has chosen to present below.
