Abstract

A personal polemic against the notion of terroir. Parmesan cheese and it's production is examined as an example of why terroir is more marketing than science.

  • Zachary Nowak, Umbra Institute

    Zachary Nowak is the coordinator of the Food Studies Program at the Umbra Institute, an American university program in Perugia, Italy. He is co-editor of a blog on Italian food history (www.foodinitaly.org) and teaches courses in food history and the possibility of sustainable food.
