The author is one of the relatively few people in Britain who can put as his profession on his passport 'mustard-maker'; a profession which he pursues under the banner of 'Wiltshire Tracklements' (see OED). His observations on mustard are followed by some of his favourite recipes, two with mustard and one - to dispel any impression that he is a gastronomical monomaniac (see OED again) - without.
